Raspberry coulis is so easy to make if your happy to cheat a little bit like I do. When I say cheat I just mean rather then having to buy fresh raspberries I just use the frozen raspberries from my local supermarket. You don’t have to limit it it to just raspberries either you can make your coulis out of whatever berries you like I sometimes use the frozen mixed berries.
It’s very straight forward you can’t really do much damage with this recipe.
250g frozen raspberries
1 dessert spoon sugar
1 teaspoon corn flour dissolved into 1/4 cup tap water
Place frozen berries in a small saucepan over medium heat. Let simmer down approx 10-15 minutes until almost boiling, add sugar and stir through to dissolve. Add corn flour liquid gradually and stir until you obtain the consistency you desire.
Remove from heat. Let cool. Store in refrigerator, use within 3-4 days. Serve with your favourite cheesecake, mud cake or any dessert you think it will compliment.
